TONY BORTHWICK’S PLUMED HORSE has been in existence since 1998. Tony is a self-taught passionate chef who has headed his tiny brigades to many victories. When the restaurant was in CROSSMICHAEL, Nr. Castle Douglas, he nearly always had his invaluable Neyda, the lady who lived next door and generally helped with all housekeeping and K.P. work. What a gem. There was always a very competent Sous Chef and always a capable and friendly front of house manager. However, there was many a day when staff were at such a premium, for one reason or another, that he’s had to almost single-handedly vacuum the dining room, iron the table cloths, set the tables, order the wine, make up orders, handle deliveries, do the other paperwork, prep the food, cook it and then.....serve it.
